I really feel like I am in a cooking rut…I tell myself that I am going to try a few new dishes every week. I have great intentions but I have yet to search out new recipes. SO–I decided that I have to make a change in my routine to make it happen. I decided to join the Meal Plan Monday hosted by oganizationjunkie.org. I have been clicking on various links and already have several new ideas! So–here is my menu for this week:
Breakfast:

We usually do leftovers, PB&J or sandwiches

BBQ Pork Sandwiches
Turkey Meatloaf, Mashed Potatoes & Peas
Crockpot Lasagna
Grilled Pork Chops, Corn, Lima Beans & Squash Casserole
Crockpot Chicken & Rice with Broccoli
Marinated Baked Chicken, Butternut Squash, Shells & Cheese, Green Beans
I have pretty much everything on hand to cover this menu. I’d LOVE for you all to email me any great, kid friendly meals that you have (or leave it in the comment section!!) I need a good meal to use some Swiss Cheese that expires in the next two weeks if anyone has any ideas!
Have you ever made a ham-ring-a-round with crescent rolls, ham, swiss cheese and a little dijon mustard? There are so many varieties. I first had this recipe at a Pampered Chef party.

This is one of my favorite recipes. It is also super simple and my kids like it.
Chicken and Stuffing Bake
4 boneless, skinless chicken breasts
4 slices Swiss cheese
1 box Stove Top stuffing (prepared as directed on package)
8 oz gravy (can be homemade or canned)
Preheat oven to 375. Place chicken in a greased casserole dish. Layer Swiss cheese on top. Spread prepared stuffing next. Pour gravy all over. Bake uncovered for 30-40 minutes, until chicken is cooked.
Or you could try this:
Chicken Cordon Bleu Casserole
2 pounds skinless chicken breasts cut into chunks
Bread Crumbs
1 Egg mixed with 1/2 cup Milk
8 oz Swiss cheese slices
8 oz ham, diced
1 can (10oz) cream of chicken soup
1-cup milk
Dip chunks of chicken in egg and milk mixture, then into breadcrumbs, coating well. Brown in a little oil until golden brown. Place chunks in a baking dish; layer the Swiss cheese and small pieces of ham. Mix cream of chicken soup with 1 cup of milk; mix well and pour over all. Bake about 30 minutes at 350° or until tender and bubbly.
They are both good! Hope this helps.

My favorite (& super easy!) recipe with Swiss cheese is my Quiche. It’s super easy and freezes well for lots of leftovers later. We also love it as breakfast! Here is the recipe (& the variations):
1 package frozen creamed spinach (or 1 package regular spinach & 3 Tbs milk)
2 eggs (egg beaters work great too)
2 Tbs chopped onion
1/2 cup cooked fresh mushrooms (or canned)
3/4 cup grated swiss cheese
3/4 cup crumbled cooked Italian sausage
1 pie crust
Mix all ingrediants, add to crust, & bake at 400 F for 25-30 minutes.
Also- whenever I have swiss cheese that might go bad soon, I grate it and then freeze it so that I can take it out and use it for this recipe later!

Hey 🙂 Here is what I would do to rid myself of that swiss cheese!!! I’d make mac & cheese and if you have ham you can totally turn it into a casserole.
Home made cheese sauce is SUPER simple and you don’t even have to do it the way most people tell you to (With flour)
Cream cheese
swiss cheese
two other random cheeses
milk
a little garlic
salt& pepper to taste
fun pasta shapes
some ham or brocolli or something like that to add in is nice but totally unnecessary.
In a saucepan, put a little butter and some cream cheese – i usually put 2 pounds of cheese in this. cause i freeze part of it..but you could totally not put that much!!
pour in a little milk and let the cream cheese melt.
cut the other cheese into either slices or chunks… or shred it. I just cut it into chunks.
put it in the pot slowly and let it melt while stirring pretty frequently. don’t walk off for sure. Make sure you keep the cheese sauce pretty thin – add milk as necessary.
once all cheese is melted, add garlic and salt and pepper to taste. while you are in the last phases of cheese cooking you boil the pasta, then you can put it in a casserole and cover with cheese sauce, crumble some ritz on top and bake it until it’s all brown and bubbly and the ritz crisp up OR you can just mix the cheese sauce and pasta together and serve it.

Hi! How do you do your BBQ Pork? I smoked one in my crockpot yesterday- it was WONDERFUL. Details are on my blog. I vote for quiche to use up your swiss cheese- my favorite thing to do. You can also freeze cheese. I have a bunch in my freezer right now.
Swiss Cheese Chicken
4 skinless, boneless chicken breasts
Pepper
1 can cream of chicken soup
1/2 c. milk
4 slices Swiss Cheese
2 c. Pepperidge Farm Stuffing
Spray butter or a few pats of butter
Preheat oven to 350 degrees. Pepper Chicken and place in casserole dish. Top with cheese slices. In a seperate bowl, mix soup and milk. Pour over chicken. Sprinkle stuffing on top and add a few sprays or dots of butter on top. Cover with foil and bake for 35-40 mins. Remove foil and bake for 5 minutes more.

Chicken N Cheese
7-8 BLSL-Chicken tenderloins
Ranch
Swiss cheese or any cheese
Ritz crackers
Coat chicken in ranch (I use a bag to give it a really good coat)
then in separate bag put in crumbled ritz crackers & grated swiss cheese. Now place chicken in bag and gove it a good coat. Place in casserole dish 350 for 20-25 mins.
Hey Jamie – i know you weren’t talking to me but i can’t resist sharing 😉 Check out this super easy way to bbq pork!!!
I usually wait till the hormel always tender pork loins are on sale – it doesn’t matter what flavor it is (I used honey mustard for this one and was afraid it wo uld turn out gross and it didn’t!! Turned out totally amazing!)
I poured an entire bottle of Kraft BBQ Sauce in the crockpot on top of the pork tenderloin. Turn the crockpot on low and let it cook for like 8-10 hours. It always winds up super duper tender and moist but it’s not falling apart like you might think. you can cut it with a fork though and pull it apart to make bbq sandwiches. You could use a different kind of bbq sauce but when I discovered this recipe i was trying to get rid of the 9 open bottles of BBQ sauce in the fridge (Thanks dad for opening 9 bottles of bbq sauce for no reason!!!) I’m now down to 1 open bottle. It took a LOT of dedication to amke it through that bbq sauce LOL!

If I am doing pok sandwiches I just season mine with S & P, throw it in the crockpot with about a cup of broth and let it go all day! If I am going to serve it as a pork roast I will season it with S&P, rosemary brown it on all sides in a little oil (on the stove top) then throw it in the crockpot with veggies and either of the following: pkg of lipton onion soup mix & water, seasoned chicken broth or half water half cream of mushroom…just depends on my mood and what I have in the pantry! 🙂
What setting do you guys use on your crockpots? Mine has 2 – low and high. and unfortunately the low is not working. I hadn’t thought about getting another since I don’t use it, but maybe if I got more good recipes I might! So, any suggestions for cooking with it on the high setting??? 😀 THANKS EVERYONE for sharing the recipes!! I love to try new things too!
