Here is my menu plan for the week. Last week I couldn’t pass up a couple of Ribeye steaks so the cabbage rolls that I had planned for last week will move to this week. I am looking for some new recipes so if you have any good ones let me know or leave a comment with a link. I am attempting a new version of chicken parm…but I really need some yummy new dishes to try!!
Crockpot Roast (roast, potatoes, carrots, onion) and Lima Beans
Stuffed Cabbage Rolls & Salad
Spinach & Feta Stuffed Chicken, Broccoli, Corn
Turkey Salisbury Steak, Mashed Potatoes, Mixed Veggies
Chicken Parmesan over Angel Hair Pasta
Jambalaya (the kids will have fish sticks as I make a spicy Jambalaya!)
Hey I like doing BBQ nacho’s! It’s easy..put a layer of tortilla chips down on a baking sheet, take sliced/shredded chicken and mix with BBQ sauce. Layer on top of chips with you fav cheeses, veggies etc. and put under broiler until melted. YUM-O!

I made the bacon wrapped recipe you posted recently from OurBestBites.com. I substituted the chicken for the Hormel Always Tender Pork (got a great deal on it) and usede the Lawry’s Teriaki Marinade. So Yummy!! That is a keeper in the cookbook.

Hey Susan–super easy. Saute a diced onion in a little oil until translucent, throw in a bag of spinach until wilted, remove from heat add a little salt & pepper and some lemon zest (I usually zest the whole lemon) and 4 oz of crumbled feta–mix it up.
Pound your chicken breast until thin then put some of the feta/spinach mixture in the middle–roll them up, secure with toothpicks and then cook the rolled chicken in a bit of oil until cooked through. It doesn’t take too long since the chicken is fairly thin from the pounding…maybe 4 minutes per turn.
