Amanda over at A Few Short Cuts has a quick and easy meal for you this week: Spanish Rice Dinner for about $2 per person!
I will definitely be making this one next week! I am a HUGE fan of meals that can be made in one pan. It seems that our days are busier and busier so I am always looking for time savers. I have been looking for new recipes that minimize my time in the kitchen but will still be delicious and accepted by my little ones! I can almost guarantee this will be a hit here at my house! I will give you guys a review after I make it next week!

Thanks Amanda–looks delicious!
Or you can skip all the chopping and dicing and use the rice version of the Hamburger Helper that’s BOGO at Publix this week. I’ll still add a little chopped onion and maybe some spice, but it might even be cheaper.
I love the short cuts dinner ideas!
Tonya,
I haven’t seen the rice Version Hamburger Helper. Which one is it? I have a whole Publix scenario at the bottom of the recipe post. Showing everyone how to get almost $40 of groceries for $15!
Amanda,
I got it today. It’s Mexican Cheesy Enchilada. I also picked up some Beef Fried Rice. That one was called Asian Helper.
I am so thrilled with my Publix totals this week. Total Savings: $136.62 Total OOP: $26.65 Take $5 off of that total for the SC Johnson rebate! Woo Hoo!
I love coupons. I need a life and I don’t even care:)
