Believe it or not I am on time for Meal Plan Monday 🙂
It has been a dreary and rainy day…but, I feel like I have been super productive today despite my desire to crawl in bed and sleep! Here is what I have planned for dinner this week:
Meatloaf, Betty Crocker Au Gratin Potatoes (Free from Publix), Basil Veggies
Stuffed Pork Chops, Acorn Squash, Garbanzo Beans
Fajitas & Spanish Rice
Chicken Parmesan probably over pasta
Jambalaya Over Rice
Spinach & Cheese Pizza, Salad
I make an awesome Mediterranean Meatloaf:
-Ground Turkey
-10 oz. box frozen chopped spinach, thawed and squeezed
-diced red onion
-diced cremini or white mushrooms
-dried thyme
-feta cheese crumbles (I use low fat)
-salt/pepper to taste
Saute onions, mushrooms and thyme in olive oil then tranfer to mixing bowl. Add spinach, feta and turkey. Mix. Place in loaf pan and bake at 375 for 45 minutes. You can also make these as burgers and serve in pitas with yogurt sauce. Either way, it is a nice substitute to regular meatloaf.
The Mediterranean Meatloaf sounds great! I am definately going to try this.
Does it not need any egg or breadcrumbs? I have never made meatloaf with turkey before. =)
can i porfavor has the recipe for the acorn squash? I do not know how to cook those but they look so interesting and i think my kids would love it – lila always loved squash in her baby food but i rarely fix squash bc i don’t know how. 🙁
No egg or bread crumbs, but I did forget one important thing…garlic. Saute with onions and mushrooms. I think the feta helps bind.
