Alaina sent me the menu that she has planned for this week. This week she left a spot open–she may kill me later but I thought we should help her decide on a recipe. Since I have a bunch of chicken in my freezer –I vote for a chicken dish that is family friendly but not labor intensive. The menu looks great and I already see a few of these being added to my menu next week! Here is what she has planned:
Creamy Taco Mac
Cranberry Almond Granola Bars
French Dip Sandwiches- Wed 5/12
?- Thurs 5/13 (still looking)
Pork Scallopine- Fri 5/14
Blueberry Baked French Toast- Sat 5/15
Mexican Slow Cooked Pork Carnitas- Sun 5/16
Grilled Cream Corn- Sun 5/16
Baked Spaghetti- Mon 5/17

Michelle and Alaina – A favorite at our house is poppyseed chicken casserole (and we’re having it tonight, since I have lots of chicken!). I use a simple recipe from my grandma:
4c cooked chicken, chopped
16 oz sour cream (I use light and it works fine)
2 cans cream of chicken soup (I use Healthy Request and can’t tell a difference)
1 sleeve of Ritz crackers, crushed
2T butter or marg, melted
1T poppyseeds
Preheat oven to 350. Place chicken in bottom of a 13×9 pan. Mix sour cream and soup and spread evenly over the chicken. Top with crushed crackers and drizzle with butter. Sprinkle with poppyseeds. Bake 30 min or til bubbly and enjoy!
And, by the way, thanks so much to both of you for everything you do to help all of us out! You might not hear it often enough, but we certainly appreciate it!

Oh, I should have mentioned – if you don’t have poppyseeds handy, don’t buy them for this – most of the time I leave them out and you don’t notice a difference (except for the fact that there are no poppyseeds in my poppyseed chicken casserole…lol).

I say either freeze the bread or make french toast 🙂 and I’ll have to look for a good quiche recipe. Yum!
