Each week, my buddy Meagan over at Frugal Fun and Fortune comes up with a great recipe to share that is meat free! This week she has a recipe that I know will be a hit here at my house: Hawaiian Style Pineapple and Red Bell Peppers.
My gang loves pineapple and rice so I am certain that this would be gobbled up quickly. I know meat free meals may not be every one’s cup of tea but I am trying hard to make sure my boys learn to appreciate and eat a wide variety of foods. Meat free meals can often be very budget friendly as well. I am pretty sure most of us could pull this dish together with items from our pantry and a couple of dollars. I could make this one right now by heading over to Publix and grabbing a pineapple for $2.99–now that is a deal (less than $1 per serving here at my house!!)
That sounds so yummy! And research said going “meatless” one day a week cuts your risk of heart disease significantly! 🙂 And its easy on the wallet too!
I had some ham left over in the freezer (I bought two bone in hams at 99c lb after Easter and cut them up – wrapped bones separately for split pea soup and then had two good size chunks from each) cut up the chunk of ham and threw it in – delicious!
I’d give anything if the little people in my house would eat rice. It’s one of my very favorite things to eat. I keep cooking it hoping that one day they will see the light. It worked with me and okra when I was little.
