I made this tonight from the past boxes of penny wafers. My three year old had three servings even after eating half a watermelon. THanks for another “staple” recipe. IS there a shortcut cookbook, if not Thanks for all the great recipes

I was just thinking the other day about putting a cookbook together for my readers. If you are interested it may just be the push I need!
OK…I messed up and left a comment in the wrong place…LOL. I made this today and it was great!! I’m not fond of flaked coconut, so I chopped up dried cranberries instead. It was wonderful….my husband loved it. It is very moist. Also, I used the lowfat wafers with no problems.
