Feta Stuffed Zucchini Boats |

Ingredients
- 4 zucchini (about 6 inches long) cut in half
- 1 egg
- Olive oil
- 1 tablespoon garlic minced
- 2 tablespoons flour
- 1 cup feta cheese
- salt & pepper
- 2 tablespoons onion chopped
Instructions
- Preheat the oven to 350 degrees.
- Use spoon or melon baller to scoop out center of zucchini (careful not to cut through-just make your boat)
- Lightly grease a pan with olive oil.
- Mix together zucchini (that has been scooped out), onion, egg, flour, garlic, salt, pepper, and feta cheese in a large bowl.
- Stuff the mixture into each zucchini boat
- Bake at 350 degrees for 25 minutes or until golden brown.
I was just asking in the forum today for ideas on how to use feta cheese, besides my usual pasta salad. I got some really good recipes, but this one sounds really easy to make. And I like that it is meatless. I go shopping Thursday, will have to pick up some zucchini. Thanks Michelle. : )
Another great way to use feta cheese is to make feta cheese omlets. Just mix together eggs, chopped tomatoes, chopped onions, feta cheese, and sliced black olives. We enjoy having these omlets for a quick dinner. YUMMY!!
Umm… i love this recipe, but it says to mix zuchani in with the rest does it mean mix the insides of zuchani with the rest? umm… so if anyone could answer that would be nice… thanks (:
