All of you guys who have been visiting me for a while probably know that I am a HUGE fan of Mexican food. I am always looking for new recipes as an excuse to make more Mexican food. When the folks at Mission Foods asked me to come up with a recipe using their tortillas I was more than happy to add one of my favorite recipes to our weekly menu 🙂
My husband is a huge casserole fan so I chose to go with a quick and easy dish that is a favorite here at my house: Taco Casserole
Unless I am baking I rarely follow a recipe. I am notorious for starting with a recipe then adding my own ingredients to make it mine. I think this one may be a couple of different recipes rolled into one–what is great is that you can modify it as you like.
Taco Casserole
Ingredients
1 pound of ground beef or turkey
1 packet of taco seasoning
1 can of crushed or diced tomatoes
1 onion chopped
1/2 bell pepper chopped
1 can cream of chicken soup
handful of chopped cilantro
1/2 cup of mexicorn
1/2 cup of black beans
1 cup of pepper jack cheese (shredded)
8 Mission Tortillas (torn into bite sized pieces)
Directions
Cook meat with onions and bell pepper until meat is browned
Drain off fat
Add taco seasoning, tomatoes, soup, corn, beans, cilantro
Cook for 3 – 5 minutes until heated through
In a casserole dish layer Meat Mixture then Mission Tortillas then Cheese–repeat and finsh with cheese.
Bake at 350 degrees for 30 minutes until cheese is bubbly!
Serve with sour cream and guacamole –YUMMY!!
This is a great dish–easy and very delicious!! You will not have to spend a lot of time in the kitchen and I find it is even better the next day as leftovers for lunch 🙂 The great thing about this recipe is that you will probably have most of the ingredients on hand. I love using Mission Tortillas–they have a great fresh baked taste and are super convenient. Often I use them in place of bread for sandwiches and wraps. The best part is that Mission Flour Tortillas contain 0 grams Trans fat per serving and are cholesterol free! I keep several packs in my freezer for a quick and easy meal!

That sounds really yummy. Might have to try adding that to my menu rotation. I love to use their bigger tortillas for cheesy chicken quesadillas – one of my favorite comfort foods.
I tried this recipe last night and it was delicious! The tortillas make it partiuclarly good because the top layer is crunchy. Thanks for sharing!
