Each week Meagan over at Frugal Fun and Fortune brings us a totally meat free recipe. This week Meagan has one of my favorites…pesto!!
My poor basil plant bit the dust after about a month and a half! I tried to keep it watered but with the lack of rain and my forgetfulness it is no more! I love homemade pesto but if you don’t grow your own basil it can be quite expensive to make it as you need a bunch and those little packs at the store can be over $3 each!! I was so excited to see that Meagan’s pesto is spinach based.

This “pesto” freezes well…just defrost in the fridfe and throw back on hot pasta!
I have made pesto with the Planters Black Pepper Almonds as well. Tasted great! Didn’t have pine nuts or walnuts, so I used what I had.
As for Basil, I tried for years to grow it and always failed. Then last year I started it from seed and had the pkg directions to read. I always picked the leaves off, rather than cutting it off a stem at a time. I always failed too. Then last year I began snipping it off as a stem- just above where a new set of leaves was starting and it worked BEAUTIFULLY! i had SOOOO much basil that I had to plan something every single week that included it in some fashion! ( I had about 6 plants in a flower box) This year I could NOT get it started from seed for nothing!! Finally got 4 plants from my sister and they are doing ok, but not as plentiful as last summer!
