It’s a sweet and savory and tastes absolutely amazing!
- 2 cups RiceSelect® Couscous
- ⅓ cup cider vinegar
- 3 Tbsp maple syrup
- 1 ½ tsp Dijon mustard
- 1 shallot, minced
- ½ tsp salt
- ½ tsp pepper
- ⅓ cup olive oil
- ½ lb Brussels sprouts, shredded
- ⅓ cup pecans, chopped and toasted
- ⅓ cup dried cranberries
- 4 slices bacon, cooked and chopped
- 2 green onions, thinly sliced
- Prepare couscous according to package directions. Let cool completely.
- Whisk together vinegar, maple syrup, mustard, shallot, salt and pepper; gradually whisk in olive oil.
- Toss together couscous, Brussels sprouts and vinaigrette. Stir in pecans, cranberries, bacon and green onions.
