Easter is just around the corner. In fact, you only have about a week to get your menu finalized and grab everything you need for your holiday meal.
My menu will always include a ham, a big batch of deviled eggs and my homemade rolls. But the additional sides will vary from year to year. I like to shake things up and give my family some different options just to keep things fresh and exciting.
So this year instead of boring mashed potatoes, I’ll be serving up that amazing Root Vegetable Gratin you see above. It’s the perfect mix of textures and flavors in one dish. The root veggies cook up in a creamy cheese sauce so the bottom is tender while the top gets brown and a little crispy. And you have to admit, those bright, earthy veggies are much more inviting in comparison to a bowl of basic potatoes.
So forget the bland and colorless side and go for a bold and flavorful combination of veggies instead. Grab your mandolin or sharp knife and a few ingredients and serve up a tasty side that just might become the star of your holiday table!
- Approx 3 lbs of root vegetables – sweet potatoes, parsnips, potatoes, beets, etc, sliced thin (approx 1/8 inch thick)
- 1 cup Hellmann’s Mayonnaise
- 1 cup heavy cream
- 1 cup gruyere cheese, shredded
- 1/2 cup shredded parmesan cheese, divided
- 1 tablespoon fresh thyme
- 1- 1/2 teaspoon salt
- 1 teaspoon black pepper
- Preheat oven to 350º F.
- In a large bowl, whisk together the mayonnaise, cream, gruyere cheese, 1/4 cup of the parmesan, thyme, salt and pepper.
- Toss the mixture with the cut veggies, ensuring they are evenly coated.
- Spray a 12″ skillet or 2 qt casserole dish with cooking spray and layer the vegetables vertically in the dish.
- Pour any excess mixture on top of the veggies and then sprinkle with the remaining parmesan.
- Bake for 1 1/2 hours or until bubbly and golden.
Slice up the veggies and layer them however you’d like.
I like to keep the veggies somewhat separate for a dramatic appearance. But, feel free to mix them up or layer however you’d like. You’ll get great flavor either way.
