Need a quick and tasty meal… no cooking required?! My Avocado Green Goddess Chicken Salad is a must-try recipe that will have you in and out of the kitchen in a flash. All you need is a few ingredients and less than 10 minutes for a chicken salad that’s absolutely amazing.
Now this is not your basic chicken salad, it’s creamy, delicious and loaded with big fresh flavor. You can serve it on bread, crackers or atop a bed of lettuce. Heck, sometime I just pop it in a bowl and eat it with a fork!
Like any good chicken salad, it starts with Hellmann’s Mayonnaise. But what sets it apart is that I use the mayonnaise to create an amazing green goddess dressing that takes the basic chicken salad and kicks it up a few notches!
- 1 avocado, halved, peeled and seeded
- 2 tablespoons lemon juice
- 1/4 cup Greek yogurt
- 1/4 cup Hellmann’s Mayonnaise
- 2 cloves garlic
- 2 teaspoons anchovy paste
- 2 tablespoons chives, chopped
- 1/2 cup fresh parsley
- 1/2 cup fresh basil
- salt & pepper to taste
- 3 cups cooked chicken, shredded
- Croissants or bread for serving
- Thinly sliced red onion, thinly sliced cucumber, lettuce, etc for serving (if desired)
- Add the first nine ingredients to the bowl of a blender or food processor and blend or pulse until smooth (approximately 30 – 45 seconds)
- Season with salt and pepper to taste.
- Add the shredded chicken and mix to combine
- Serve the chicken salad on croissants topped with lettuce, red onion and cucumber if desired
Ready in a flash, this is the perfect recipe to make when you are short on time or just don’t feel like cooking! And with only a few ingredients needed, you can whip up a batch super fast. Plus it’s easy on the budget too!
