Laurie over at Passionate Penny Pincher sent me her recipes for the week. I am loving that recipe for Blueberry Scone Muffins!! I know you all have some blueberries on hand 🙂 I actually made a blueberry cobbler that was just divine–YUM!! I still have some blueberries so I think I might just make muffins too!!

i took my blueberries and my strawberries that i got on sale from the 6/17-6/22 ad and pureed them to go over my bogo eggos [from the same ad plus a 1/2 Q!!!] instead of syrup! 🙂

I just finished eating the last blueberry muffin tonight (as I’m typing . . .) they really are so yummy – and you gotta love free blueberries! (My kids would love that puree for waffles too!)
I made a very delicious blueberry cobbler last night. It was quick, easy and delicious!
here is the recipe for the delicious, cheap and easy Blueberry Cobbler:
2 c. Bisquick (coupons.com & target.com have a coupon)
3 tbsp. butter, melted
3/4 c. milk (you could use with the smart balance on sale this week)
1 c. sugar (you could use the dominoes on sale this week also)
1 egg
1 qt. blueberries (2 containers)
Preheat oven to 350 degrees. Place blueberries and butter in bottom of baking dish. Mix the rest of ingredients (Bisquick, milk, sugar and egg) and pour on top of blueberries. Bake until golden brown (about 20 to 30 minutes).

here is my cobbler recipe…but I warn you there is nothing diet about this baby–but it is the best I have ever had!!
melt a stick of butter in a 9×13 pan at 250 while you mix the following
Mix well—1 1/2 tsp baking powder, 1 c of flour, 1 cup of sugar & 3/4 cup of milk.
remove pan from oven make sure butter is even then pour in mixture–do not stir do not spread!!!
add two cups of fruit to top–do not stir!!
add a cup of sugar over fruit–do not stir!!
Bake at 325 for 45 minutes——————YUMMY!!!!
