For me, that means wowing my guests with unexpected snacks and appetizers. So if you’re like me and interested in trying something fresh and different this holiday season, here’s one of my faves… courtesy of Galbani Cheese.
This Fresh Mozzarella Grilled Crostini recipe takes the ingredients found in a traditional Caprese salad (a personal favorite of mine) and puts them all on grilled, pesto-covered crostini slices of French or Italian bread. Once assembled, you just warm them all in the oven, top with fresh basil, and in a matter of minutes you’ve got a perfectly craveable appetizer to tempt your guests with. And between the rich, piney punch of the pesto and all the festive colors involved, it’s surprisingly seasonal!
- 8oz. Galbani® Fresh Mozzarella Ball
- 4 slices French/Italian bread
- 1/4 cup Extra Virgin Olive Oil
- 4 Tbsp. pesto
- 20 cherry or mini heirloom tomatoes, sliced
- fresh basil leaves
- salt and pepper, to taste
- Brush the bread slices with olive oil and grill.
- Once cooled, spread 1 tablespoon of pesto on each slice.
- Top with 1 slice of Galbani® Fresh Mozzarella, tomatoes and a dash of olive oil.
- Add salt and pepper to taste. Warm in the oven. Serve with fresh basil.
