Now that the holidays are over you may find that you have lots of leftover hanging out in your refrigerator. Instead of tossing them, you may be able to give them new life. With just a little effort, you can turn neglected leftovers into a tasty new meal.

Whenever I have leftover rice, my go-to recipe is always a batch of delicious rice cakes. You can throw in any cheese or veggie and you’ll have a great way to make use of any extra food you might have handy. One of our favorite versions are those delicious Broccoli, Cheddar and Bacon Rice Cakes using Hatfield Bacon that you see above. A few basic ingredients come together for a hearty and flavorful dish that is sure to please.

Now these are not those chalky board-like rice cakes that you find in the snack aisle. My Broccoli, Cheddar and Bacon Rice Cakes are perfect atop a salad or even as a side dish paired with your favorite protein. Cut into the crispy outside to reveal a soft inside with melty cheese and that delicious Hatfield Bacon scattered throughout. You get amazing flavor and texture in every single bite.

The best part is that they are crazy simple to prepare. Just mix everything in a bowl, form the patties and fry until crisp. Pull out your leftovers and whip up something tasty this week.

Broccoli, Cheddar And Bacon Rice Cakes

Ingredients
  • 2 cups cooked rice (best if cold)
  • 1 cup cheddar cheese, shredded
  • 1/2 cup chopped steamed broccoli florets, steamed crisp – not mushy
  • 2 eggs, whisked
  • 1 tablespoon grainy dijon mustard
  • 2 green onions, chopped
  • 8 slices Hatfield Bacon, cooked crisp and crumbled (approx 1/2 cup cooked)
  • 1/2 cup Panko bread crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil (for frying)
Instructions
  1. Add all ingredients (except oil) to a medium bowl and mix to combine.
  2. Using your hands, press and mash the mixture to form 10 patties.
  3. Heat the oil in a large skillet over medium heat and cook the rice cakes 5 – 6 minutes per side, until golden brown.
  4. Serve warm with your favorite sauce.

 

We love these so much, I always make extra rice just so I can serve these the next day. If you want to try these but don’t have cold rice, those heat and eat rice pouches will work just fine.

Just don’t leave out the Hatfield Bacon. The smoky bacon flavor is such a perfect combination with the rice and broccoli and really gives the rice cakes so much amazing flavor. If you don’t have a couple of packs of Hatfield Bacon on hand at all times, you really should!
