Easy and Healthy Pineapple Chicken Stir Fry

Ingredients
  • 2 cups Minute Brown Rice, prepared according to package directions.
  • 3 teaspoons olive oil, divided
  • 1 pound boneless skinless chicken breast cut into bite sized chunks
  • 2 – 3 small bell peppers, cut into bite sized pieces (or one large pepper)
  • 1/2 medium red onion, cut into bite sized pieces
  • 1 cup broccoli florets
  • 1/2 cup snow peas, trimmed
  • 1 cup pineapple chunks
  • Sesame seeds and green onion, for garnish
  • SAUCE
  • 1/4 cup pineapple juice (from can with chunks)
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons rice wine vinegar
  • 1/4 cup water
  • 1/3 cup low sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
Instructions
  1. Add all sauce ingredients to a small and whisk to combine, set aside.
  2. Heat 2 teaspoons of olive oil in a large skillet over medium heat and cook the chicken for 6 – 8 minutes, until browned and cooked through. Remove to a paper lined plate.
  3. In the same pan, heat the final teaspoon of olive oil then add the peppers, onion and broccoli and cook for another 6 – 8 minutes, until veggies are softened.
  4. Add the cooked chicken, pineapple chunks and snow peas bak to the pan.
  5. Whisk the sauce ingredients once more, then pour into the pan.
  6. Cook everything together over medium heat for 5 minutes or until the sauce has thickened, stirring often.
  7. Serve over prepared Minute Brown Rice and garnish with sesame seeds and chopped green onion, if desired.
