Amanda is on vacation this week so I thought I’d do a meal deal for you guys. I have a delicious recipe that can be modified to suit even the picky eaters in your family! Lasgna Rolls Ups are always a hit at my house and I usually just use whatever I have on hand.
Here is my recipe for Vegetable Lasagna Roll Ups in a Bechamel Sauce.
You will need
Precooked lasagna noodles (cooked according to directions on package)
2 cups ricotta cheese
2 cups cheese (mozzarella or fontina are delicious for this recipe)
1 cup + shredded veggies (I use carrot, zucchini and spinach)
1 egg
1 Tablespoon vegetable oil
1 chopped onion
14-oz can chicken broth
1/4 cup flour
1/4 tsp of nutmeg
1/2 cup Parmesan cheese
Step One–prepare the rolls
Mix 1 cup of ricotta, veggies, egg and 1 cup of the cheese in a bowl.
Spread a layer of veggie mixture onto a lasagna noodle and then roll it up and place it seam side down
Step Two–prepare the sauce
Saute the onion in oil until tender
Add the remaining ricotta, broth, flour and nutmeg to the onion and cook until the mixture comes to a boil (stir frequently)
Remove from heat and add 1/4 cup of Parmesan cheese
Step Three-putting it all together
Pour a little sauce in the bottom of your baking dish
Place your rolls on top of the sauce
Pour remaining sauce over the rolls
Sprinkle with remaining cheeses (parm & mozzarella)
Bake at 350 degrees for 30-40 minutes until cheese is bubbly
YUMMY!!
Ok now for the cost break down–I am going to have to estimate a bit but hopefully it will give you a general cost. I am also going to assume you have pantry staples eggs, oil, flour, and nutmeg.
If Ronzoni makes a Healthy Harvest lasagna noodle grab two boxes use a $1/2 listed in the match ups to get both for .79¢
Ricotta –Publix brand is $2
Kraft Mozzarella @ $2.79 (buy 2 and use the $1/2 from 08-09-09 RP if you need more cheese)
Veggies–varies but we will say $3 for all –get the small frozen box of spinach (defrost and make sure to squeeze all the liquid out!!)
Chicken broth-grab some Progresso there is a $.50/1 HERE when doubled you should get a carton for maybe $1.50
Parmesan Cheese -$2.50
I estimate the meal to cost about $3.15 per person. The best thing about this dish is that you can modify it to suit your needs. Leave out a veggie or add a different one. Sometimes I add shredded chicken and sometimes I use a jar of tomato sauce. I love that I can vary it…that way it is not like eating the same meal over and over!

Hey great recipe! Ronzoni does have a lasagna whole wheat BUT it was the only one not on BOGO this week..
That definitely sounds good, but I’d have to use meat instead of the veggies…the men in my house wouldn’t touch it otherwise. 🙂 Thanks for sharing!
